Recipes from the Knab house (Maple Roasted Brussels sprouts with bacon)

Who doesn't like a good recipe? I have many. I have many old recipes from my Mom and Grandmother's that I still make today. I still make a lot of the old recipes; out of tradition for most. I mean I can't not make my Mom's Melting shortbread recipe at Christmas. They're just so good. Finding a good recipe is so much easier than it was years ago. You just have to google one and you have it in seconds. A recipe book seems to be a thing from the past, but I still keep mine. I even made my own recipe book(s) and have given them for gifts. Especially to my family as they contained a lot of our old family recipes.

I'm gonna try and put a few of my favourite recipes in my blog. Ones that I have tried and know are good. At least for me, LOL. Some of the ingredients I've grown on the farm but some I haven't. The first is a Brussel Sprouts recipe. For the life of me, I just can't seem to grow Brussel Sprouts. I don't know if it's the seeds or what the problem is but they just don't produce. So I either buy them at the store (fresh) or when their in season I've bought them at the Cedar's market vendors. I remember as a kid I just hated brussels sprouts. It's funny how our taste buds change as we grow older. Now I can eat them the day after cold from the fridge. My daughter even likes them now. She makes her own recipe with garlic and lemon every year for Christmas at our house. My recipe is one that I put together from one I tasted at a local restaurant here in Parksville. I think mine is better because I use local, produce and our own pork bacon. lol. It's super easy to make. Everybody who has it raves about it, except my daughter who likes her own recipe. But that is fine, hers is fabulous too. Here it is:

INGREDIENTS:

1 lb. Brussels sprouts, trimmed

1/4 cup extra-virgin olive oil

3 tbsp pure maple syrup

4 slices bacon, cut into 1/2 inch pieces

1/2 tsp salt

1/4 freshly ground black pepper

2 cloves garlic, minced


DIRECTIONS:

1. Preheat oven to 400 degrees F.

2. Place Brussels Sprouts in a single layer in a baking dish. Drizzle with olive oil and maple syrup, toss to coat. Sprinkle with bacon, season with salt, and pepper, and minced garlic.

3. Roast in pre-heated oven until bacon is crispy and Brussels Sprouts are caramelized, 45 minutes, stirring halfway through.

4. Serve immediately.
